Job Description

The Senior Manager Financial Analyst for Food & Beverage will be responsible for department inventory, Financial modeling, Product pricing analysis, Building and developing schedules, Forecasting & budgeting, Sales values analysis and bench marking analysis. Requires working closely with F&B Managers in a cross functional, matrixed, and fast paced environment.

PRIMARY RESPONSIBILITIES

General Knowledge

  • To have complete on the food/beverage/service available in section appointed.
  • Ensure that the Hotel standards and policies are explained to staff and correctly applied.

Operation / Communications 

  • Monitor and ensure smooth operation of the section appointed (restaurant/banquets/beverage) as applicable. Maintain consistency in quality of food/beverage/service/cleanliness of the section appointed.
  • Constantly obtain guest feedback during operation to ensure high guest satisfaction. Taking ownership of guest complaints and handling them professionally.
  • Ensure effective communication within the department and division. Conduct / attend F&B divisional and departmental meeting.
  • Ensure general maintenance of all operating materials, equipment’s and machinery in order to prolong usage.  
  • To ensure that all staff are aware of and applies the procedures concerning Hotels fire and life safety / emergency procedures.
  • To ensure that the staff is well knowledgeable and applies necessary precaution with regards to the hotel food safety and hygiene standards.
  • To co-ordinate with the chef on planning of promotion / menu planning / staff training.
  • To participate in effective staff management (staff hiring / transfers / overtime) with proper approvals from the division heads. Creating an environment where the staff are motivated, observe individual staff performance / grooming / punctuality, also perform staff appraisals / disciplinary action if required and submit weekly staff roaster / training schedules to division head.
  • To liaise with stewarding department on quarterly inventory taking / cost / breakage. Approves food/beverage/general requisition and be aware of the cost involved.
  • Present the section P&L statement with the justification on the expense line (+/-5%) to division head monthly. Implement appropriate and effective measures to improve control on costs / expense / labor.
  • Clear understanding of the direct competitors and seek for counter measures (vis SWOT analysis and regular competitors survey) 
  • Develop annual plans, associated budgets and sales strategies, monitor performance against this initiating corrective action where necessary to ensure operations are conducted within the agreed financial parameters and targets are achieved.
  • Maintains departmental Standard Operating Procedures and ensures that all colleagues have a working knowledge and follow the SOPs at all times.
  • Consistently monitors quality of food and beverages being served and service quality, escalating any major problems/ complaints to Senior Management.

QUALIFICATIONS

  • College graduate or has a degree of hotel and restaurant management ( preferred but not required )
  • Preferably at least 2 years of experience in management in a 5 – star establishment / or international property.
  • Knowledgeable in computers and financial flow through of the bar and restaurant.
  • Competent to be a team leader, react quickly and work well under pressure. Tactful and sensitive to employee needs.
  • Positive role model, possess good interpersonal, customer service, communication and organizational skills.
  • Able to work on shifts and flexible regarding work schedules based on business demands.
  • Possess a positive attitude towards accepting any other duties and responsibilities assigned by the senior F&B Management.
