Responsibilities

• Supervise the function of all kitchen employees, facilities, costs and contribution to maximizing the overall F&B department profit
• Oversee day-to-day kitchen operations, including providing staff training, monitoring operating budget control
• Responsible for the production, preparation and presentation of all food items to ensure highest quality at all times
• Responsible for the preparation of menus and participate in the pricing policy in consultation with the Director of Food & Beverage
• Ensure and maintain hygiene standards
• Develop formal training plans and conduct on-the-job training for kitchen employees
• Conduct job interview, staff orientation, performance appraisal, coaching and counseling to ensure appropriate staffing and productivity
• Manage and motivate the kitchen’s team, ensure effective communication among kitchen’s team

Qualifications

• Bachelor degree holder or Professional Certificate in Culinary or Hotel Management
• 10 to 15 years of relevant experience in the hotel industry with at least 5 years experience in similar capacity in luxury hotel
• Extremely sound knowledge in all the functional areas of kitchen renovation, operations, particularly costing, quality control, menu planning, budgeting, staff training, HACCP Certificate, etc.
• Knowledge of volume production and ability to maintain the highest quality standards
• Excellent command of both spoken and written English and Chinese are essential while Mandarin is a plus
• A task master with strong leadership qualities
• Sound leadership, communication and interpersonal skills
