Job Description

We are looking for an energetic candidate to lead our unit’s Production function.

What the job entails:

 

  • Responsible for the overall operation of the Food Production process which includes Preparation Room, Cold Kitchen, Butcher Shop, Hot Kitchen and Pastry Room
  • Ensure execution of processes in the Production are executed in an effective and efficient way according to agreed objectives which include the optimization of manpower and material resources
  • Daily duties including but not limited to motivate chefs, prepare schedules, control and supervisor quality, handling errors and accidents that occur during the service
  • Assist Executive Chef to foster continuous improvement initiatives and provide a climate for change to achieve improvement in areas like Quality Consistency, Hygiene and Safety compliance and Material and Labour efficiency
  • Provide assistance in analyzing monthly financial performances, establishing action plan with corrective action to meet the scheduled budget
  • Manage the manpower and work allocation in accordance with the budgeted figures. Suggest corrective actions in case of any deviations
  • Assist in training for the team members to enable them in exercising their function and responsibility

  

What qualities a suitable candidate should possess:

 

  • Ideally with an apprentices of professional diploma in Food Production
  • Appreciate the complexities in the airline catering / hospitality  business
  • Strong experience in overall food production operations
  • Good practical, operational and adequate administrative skills with a flair for creativity are a must
  • Keeps abreast of Culinary operations
  • Excellent English and Chinese is a must
