Job Description

Responsibilities       

  • Supervise bakery section and work close with Executive Chef. Ensure compliance with our Operation standards, Company policies, Health & safety.
  • Manage shifts which includes: daily decision making, scheduling, planning, product quality and cleanliness.
  • Develop employees by providing ongoing feedback, establishing performance expectations and by conducting performance review.
  • Responsible for meeting the daily pars and production for viennoiseries and bread items under the direction of the Executive Chef.
  • Responsible for checking daily the consistent high quality of food preparation, food appearance and tastings with all issues being feedback to Executive Chef.
  • Assist with product launches and production schedules for new menu items.
  • Work in close contact with Executive Chef on all new items, supplying picture and / or test items in a timely manner.
  • Trains the culinary team on all new recipes and standards.
  • Keep excellent sanitary practices in line with Company standards for food handling, general cleanliness, and maintenance of kitchen.
  • Additional responsibilities as needed by the business. A ‘’do what it takes” attitude.

 

Requirements

  • 7 years’ or above experience in bakery industry.
  • At least 3 years’ experience as Head Baker, Sous Chef, or Executive in high volume production or F&B organization with highest levels of services is preferred.
  • Supervisory experience in a team of over 15 staffs.
  • Great communication and responsiveness.
  • Solid experience and skills in handling viennoiseries and lamination.
  • Excellent knowledge in baking methods, ingredients, equipment and processes.
  • Understand and have good knowledge in the trends of pastry and bakery.
  • Detail oriented, well organized, self-motivated and demonstrate great passion in food and constantly drive for perfection.
  • Experience in a new opening is a plus.
  • Good command of English and Cantonese.
