Main Duties and Responsibilities

• Responsible and has the overall accountability for all culinary outlets as well as for the overall daily operation and co-ordination of the Club’s Kitchens
• Responsible for developing menus, food purchase specifications and recipes
• Strategic management of food costs, forecasts, budgets, business planning and general cost-saving initiatives
• The maintaining the highest professional food quality and hygiene standards as set by the Management for the Club
• The supervision of staff in directing, organising, training, planning and controlling all Kitchen operations
• Be accountable for the efficiency and quality production of all food items served from the Kitchens
• Reporting to General Manager and Head of F&B Sub-Committee
• Leading the Kitchen Team of 40 staff

Requirements

• Diploma or above in Culinary Studies
• 15 years working experience in authentic Western Cuisine with 5 years Kitchen management experience in Hotel/Club
• A thorough and demonstrable knowledge and understanding of Western and Asian cuisines
• Good knowledge of Food and Wine pairing is an advantage
• Exceptional communication skills and to be able to communicate effectively with a diverse cultural workforce
• Possessing a Hygiene Manager/HACCP Certificate is highly preferred

Established in 1904, the Kowloon Cricket Club (KCC) is a private members’ club and is one of the leading sporting clubs in Hong Kong. We, promote participation in cricket and a wide variety of other sports, as well as encouraging social activities.  We have a green environment in the heart of Kowloon.
