Job Description

JOB SCOPE

To assist Group Director of Food and Beverage in overseeing the operation of I-O-N restaurant chains and are key participants in the chain’s strategic business planning, financial performance, operation efficiency and guest satisfaction.

To lead their team on key planning issues and business operations decisions as well as set business objectives and performance goals, and conduct meetings with restaurant heads to review procedures and performance. To oversee the monitoring and reporting of departmental performance. He/she provides financial oversight and monitoring, and prepare and present financial and operations reports to Group Director of Food & Beverage.

DUTIES & RESPONSIBILITIES

F&B Operation

  • Oversee day-to-day operations of I-O-N Restaurants
  • Monitor guest satisfaction/feedback in relation to service and food quality
  • Keep management promptly informed of all feedback and follow through appropriate actions accordingly
  • Implement daily/weekly/monthly audit checks for all I-O-N Restaurants and ensure proper follow-up to obtain maximum quality, efficiency and consistency
  • Oversee, supervise and assist in the operation of all I-O-N Restaurants to ensure smooth running with quality food and service
  • Attend regular F&B meeting to discuss about forthcoming promotion, events and special project as well as new menu implementation and other businesses related to the operations
  • Conduct the daily meeting with culinary team and all heads of I-O-N Restaurants, to work on the daily events, new menu implementation and special projects, etc. 
  • Check all guest comments and work out any corrective measures to be taken in each case, in order to drive service excellence
  • Check regularly on the hygiene and safety in all areas
  • Inspect the receiving area and the storeroom to ensure proper receiving of the food products for the day and avoid any situation arising from delivery or sub-standard quality. Make sure that all food requirement have been fulfilled
  • Control of breakage and loss of chinaware, silverware and cutleries, etc.
F&B Administration
  • Assist Group Director of Food and Beverage in developing yearly plan for I-O-N Restaurants  
  • Monitor the actual performance as compared with the planned performance and take corrective action
  • Compile and distribute revenue forecast, sales analysis data and operating reports
  • Implement marketing programs and reinforce suggestive selling
  • Handle F&B related correspondence and coordinate for site inspection, preparation of event order and logistics, etc
  • Attend communication meetings with other departments
Marketing & Promotion / Merchandising
  • Prepare F&B and festive promotion for I-O-N Restaurants, in collaboration with Marketing Manager, Executive Chefs and restaurant managers.
  • Coordinate for the advertising and marketing plan
  • Co-ordinate for all collateral and printing material with the team of F&B Marketing and Event
Repair & Maintenance
  • Ensure all F&B areas are kept clean and uncluttered in accordance with the group’s standards and compliance requirements
  • Ensure all venues, facilities and equipment are in good condition
Finance & Procurement
  • Control procedures for purchasing, receiving, storing and taking inventory of food, beverage, chinaware, glasses, silverware and other supplies
  • Maintain and coordinate with Group Procurement Department according to the group’s guidelines
  • Assist in menu pricing and cost control, in coordination with Financial Controller, Executive Chefs in order to maximise total revenue and profitability in line with the outlet policy and profit budget. Revise the pricing structure to adopt the market situation when appropriate.
  • Prepare annual budget for I-O-N Restaurants

Human Resources & Training

  • Ensure human resources is fully utilized and engaged
  • Establish and implement an on-site induction program for the new hires
  • Counselling, coaching and solving problems with department heads or team members
  • Ensures the rosters of team members are scheduled according to the forecasted business
  • Control of causal labour requisition
  • Any other relevant projects and duties as assigned by superior

 QUALIFICATION & EXPERIENCE

  • Graduated from hotel management school
  • At least 10 years of relevant experience, preferably in hotel and catering industry
  • Strong business sense, marketing mind and project management
  • Good PC knowledge in MS Words and Excel
  • Good command in both written and spoken English and Chinese.
