The malay word rempah means spice. In practice, rempah is a blend of herbs and spices used as an aromatic base, the backbone of numerous recipes popular in singapore and malaysia – particularly in peranakan (otherwise commonly known as nonya) kitchens. The inspiration behind the menu of REMPAH NOODLES is the huge diversity of ingredients that may be deployed in a rempah and the fusion of traditional and modern methods of cooking.
